6 medium potatoes 60g (2 oz) butter 4 tblsp milk Freshly ground black pepper 1 green cabbage 1 onion
Scrub potatoes and boil in their skins for 30 minutes. Peel and mash thoroughly until smooth. Add half the butter in pieces and gradually stir in the milk. Season with salt and black pepper.
Shred cabbage finely, discarding stalk. Chop onion finely. Bring cabbage and onion to the boil in the minimum amount of water, turn down to a simmer, cover and cook for 5-8 minutes. Stir in the mashed potato and the remaining butter.
Reheat, stirring continuously, and serve.
